Ingredients:
1 3/4 cup rolled oats
1 cup flour
1/2 cup sugar
1 tablespoon baking powder
1/4 teaspoon nutmeg
2 1/3 cups shredded carrot
2/3 cup fat free milk
2 tablespoons fat free sour cream
1/4 cup egg whites, lightly beaten
Instructions:
Line muffin pan with papers or spritz with nonstick spray. In a mixing bowl, combine flour, sugar, oats, baking powder, and nutmeg.
In a separate bowl mix together carrots, milk, sour cream, and egg white. Blend together dry and wet ingredients. Fill each muffin cup a little over half full. Bake at 350 degrees F for 20 minutes. A toothpick or fork inserted in center should come out clean when done.
Ingredients:
2 cups all purpose flour
1 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2/3 cup brown sugar
2 eggs (beaten)
2/3 cup milk
1/4 cup butter (melted)
1 cup peeled and grated/shredded apple
1/4 cup chopped walnuts (optional)
Directions:
In a large bowl sift together the flour, baking powder, salt, cinnamon and nutmeg. Mix in brown sugar. In a separate bowl, combine eggs, milk and butter. Mix well. Add egg mixture to flour mixture and mix (do not over mix). Fold in apples and walnuts (if using). Spoon batter into lightly greased muffin tin. Bake in preheated oven at 350F for approximately 20 minutes or until golden and baked through. Let cool in pan for 5 minutes before removing to wire rack to cool completely.

2 cups all-purpose flour
½ cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 egg (lightly beaten)
1/3 cup vegetable oil
1 cup unsweetened applesauce
1 cup fresh or frozen cranberries, chopped into smaller pieces
½ cup pecans chopped
Directions:
Preheat oven to 350F. Lightly grease the muffin tin. In a large bowl mix together the flour, sugar, baking soda, salt and cinnamon. In a separate bowl mix the eggs, applesauce and oil. Add the applesauce mixture to the dry ingredients and mix together gently (do not over mix).
Gently fold in cranberries and scoop mixture into muffin cups until 2/3 full. Bake at 350F for approximately 30 minutes. Cool for 5 minutes before removing from pan.

1 cup pumpkin puree
2 eggs (beaten)
1/2 cup chopped pecans
Directions:
In a large bowl, combine flour, baking soda, baking powder, brown sugar, cinnamon and salt. Mix well. In a separate bowl, combine pumpkin puree, eggs and vanilla. Add pumpkin mixture to flour mixture until just combined. Do not over mix. Fold in chopped pecans. Spoon batter into lightly greased or lined muffin tin and fill to 2/3 full. Bake in preheated oven at 350F for approximately 20 minutes or until golden and baked through. Cool in muffin tins for 5 minutes until removing to wire racks to cool completely.
