Ingredients:
1 cup butter or margarine, softened
2 cups sugar
2 cups apple sauce
3 cups sifted all-purpose unbleached flour
1 ¾ teaspoon baking soda
1 cup seedless raisins
1 teaspoon vanilla
Instructions:
Preheat oven to 350F. Grease a medium sized baking pan and lightly sprinkle with flour. Set aside. Beat the butter and sugar in a large bowl. Add the applesauce (make sure it’s cold) and 2 ¾ cups flour. Mix well. Fold in the raisins, remaining flour and vanilla extract. Mix well and poured into greased baking pan. Bake approximately 1 to 1 hour and 15 minutes until golden and baked through. Let cool for 5 minutes then remove to wire rack to cool completely.
Note: You can also add 1 cup chopped walnuts to this bread when you fold in the raisins.

2 cups all-purpose flour
½ cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 egg (lightly beaten)
1/3 cup vegetable oil
1 cup unsweetened applesauce
1 cup fresh or frozen cranberries, chopped into smaller pieces
½ cup pecans chopped
Directions:
Preheat oven to 350F. Lightly grease the muffin tin. In a large bowl mix together the flour, sugar, baking soda, salt and cinnamon. In a separate bowl mix the eggs, applesauce and oil. Add the applesauce mixture to the dry ingredients and mix together gently (do not over mix).
Gently fold in cranberries and scoop mixture into muffin cups until 2/3 full. Bake at 350F for approximately 30 minutes. Cool for 5 minutes before removing from pan.
