Ingredients:
1 ¾ cups flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1/3 cup margarine
¾ cup crunchy style peanut butter
2/3 cup brown sugar
2 eggs, lightly beaten
1 cup mashed bananaInstructions:
Preheat oven to 350F. Lightly grease a medium loaf pan and set aside. Combine flour, baking powder, baking soda and salt and sift into a large bowl. In a separate bowl add the peanut butter, margarine and sugar and mix together. Add the eggs and mix. Add this mixture to the sifted dry ingredients and mix together but do not over beat. Gently fold in the mashed banana and transfer to baking pan. Bake at 350F for approximately 45 minutes to 1 hour or until baked through.

1 cup all-purpose flour
1 cup packed brown sugar
3/4 cup butter
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
3 cups rolled oats
1/2 cup chopped walnuts (optional)
1 egg
1/2 cup mashed banana (ripe)
Directions:Preheat oven to 350 degrees F. Combine flour, baking soda, salt and cinnamon in a bowl and set aside. In a large bowl, mix butter and brown sugar. Mix in egg, mashed banana and vanilla. Add flour mixture to butter mixture and mix well. Stir in rolled oats and walnuts (is using). Drop by teaspoonfuls onto a non-stick cookie sheets. Leave about 2 inches between cookies for spreading. Bake for 8 to 10 minutes or until golden brown. Cool for 5 minutes before transferring to wire racks to cool completely.

2 1/2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda
1 cup granulated sugar
2/3 cup butter (softened)
2 eggs
1 teaspoon vanilla
1 cup mashed banana (ripe)
2 cups semisweet chocolate chipsDirections:
Preheat oven to 375F. Sift the flour, salt, baking powder and baking soda into a bowl and set aside. Mix butter and sugar in a large bowl until creamy. Mix in eggs, vanilla, and mashed banana. Add flour mixture to butter mixture and stir until just combined. Gently stir in chocolate chips. Drop by teaspoonfuls onto a non-stick cookie sheet. Bake about 12 to 15 minutes or until golden brown. Cool for 5 minutes before removing to wire rack to cool completely.
*Tip: When baking banana cookies try to use bananas that are very ripe. These will give the cookies a sweeter taste, which means you can even use less sugar than recipe calls for.

November 11th, 2008Main Dish*Cooking chicken and bananas together may sound a little strange to you… but kids really love this delicious and easy chicken recipe.
Ingredients:
4 halved skinless chicken breasts
1 can corn kernels (drained)
2 bananas (peeled)
2 tablespoons butter
8 bacon strips
1 1/2 cups cream
Salt and pepper to tasteDirections:
Preheat oven to 350F. Lightly butter a baking tray and spread corn evenly covering bottom of tray. Take the chicken breasts and carefully cut a small pocket in each chicken breast (slice into the side as if you were dividing into two thin pieces). Press half a banana into each pocket (you can mash bananas to make this easier). Close chicken breasts over and sprinkle with salt and pepper if using. Place chicken breasts carefully on top of corn. Drizzle with cream. Cut the butter into small knobs and place evenly through tray. Top each chicken breast with bacon slices. Bake in preheated oven approximately 30 to 40 minutes or until bacon is crisp and chicken is cooked through.

2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup butter (softened)
1 cup sugar
2 eggs
2 ripe bananas mashed
2/3 cups plain yogurt
1/2 cup chopped walnuts (optional)Directions:
In a bowl combine flour, baking powder and baking soda. In a separate bowl mix butter and sugar until well combined. Add eggs and mashed bananas to butter mixture. Add to flour mixture along with the yogurt and mix together well (until smooth). Spoon batter into lightly greased baking pan and top with walnuts (if using). Bake at 350 degrees for about 35 minutes or until baked through.
