Ingredients:

4 large sweet potatoes
2 tablespoons olive oil
1/2 cup skim milk
1/2 cup dry sherry
1/2 cup frozen orange juice from concentrate
1/2 cup brown sugar
1 teaspoon nutmeg
1 teaspoon cloves
1 teaspoon cinnamon
1 pinch salt
4 large egg whites
2 tablespoons sugar
2 oranges, sliced thin

Instructions:

Place the sweet potatoes in a large saucepan.  Cover them completely with water.  Place the saucepan over medium high heat and bring water to a quick boil.  Reduce heat to medium and continue cooking 15 minutes or until the potatoes are fork tender.  Drain the potatoes well and place them in a mixing bowl.  Mash the potatoes with a potato masher or a fork.  Pour the oil, milk, sherry and orange juice concentrate in with the mashed potatoes.  Dump the brown sugar into the bowl.  Sprinkle in the nutmeg, cloves, cinnamon and salt.  Use an electric mixer on medium speed and beat the ingredients together well for about 2 minutes.  Spray a baking dish with a non stick cooking spray.  Spread the potato mixture evenly in the dish.  Heat the oven temperature to 350 degrees.  Bake the potatoes 20 minutes.  In a small bowl beat the egg whites with the mixer until stiff.  Add the sugar 1 teaspoon at a time, beating after each addition until soft peaks begin to form.  After 20 minutes remove the potatoes from the oven and spread the meringue over the potatoes being sure to go all the way to the edge of the pan.  Return the potatoes to the oven and continue baking 7 minutes or until the meringue is a nice light brown. Remove from the oven and place the orange slices on top.

Ingredients:

1 cup minus 2 tablespoons cake flour
1 1/2 cups sugar
2 tablespoons cocoa powder
10 egg whites at room temperature
1 1/4 teaspoons cream of tartar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
6 tablespoons skim milk
2 oranges cut into segments

Instructions:

Place the flour, 1/2 cup sugar and cocoa powder in the sifter.  Sift together into a large mixing bowl.  Repeat the sifting process again. Place the egg whites in a bowl.  Add the cream of tarter and the salt. Beat on high speed with an electric mixture until soft peaks begin to form.  Pour 1/2 cup of the sugar into the egg mixture. Beat for 1 minute.  Place the remaining 1/2 c sugar, 2 tablespoons at a time into the egg mixture and beat with the electric mixer after each addition.  Pour in the extract and stir to combine.  Add the flour mixture to the egg mixture and stir just until moistened.  Place the oven temperature on 350 degrees and allow to preheat.  Pour the cake batter into a tube pan.  Do not grease the pan.  Bake 50 minutes or until the cake bounces back easily when lightly touched. The cake should be a light brown when done.  Remove the pan from the oven and all the cake to cool completely before removing from the pan.  Place the chocolate chips into a bowl.  Pour the milk into a saucepan and place over low heat.  Heat the milk to just boiling.  Pour the heated milk over the chocolate and allow sitting 30 seconds.  Stir until the chocolate is completely melted and the mixture is smooth. Pour the chocolate over the cake and top with the orange segments.

Ingredients:

1 teaspoon butter
4 firm, tart apples, peeled, cored and sliced
1/2 teaspoon ground cinnamon

Instructions:

Place the butter in a skillet over medium heat.  Allow the butter to melt completely.  Add the apples and stir to cover with the melted butter.  Sprinkle the cinnamon over the top of the apples.  Continue cooking on medium heat about 10 minutes or until the apples are fork tender.  Top your favorite ice cream, pancakes, pound cake or any other dessert or food.

Ingredients:

4 egg yolks
4 egg whites
1 cup sugar + 1 teaspoon sugar
1/2 teaspoon cinnamon + 1/4 teaspoon cinnamon
1 cup butter, melted + 1/3 cup butter, do not melt
1 1/2 cup flour
3 sweet apples, cored, peeled and thinly sliced
3/4 cup brown sugar
3 tablespoons water
1/3 cup corn syrup
1/4 cup sweetened condensed milk

Instructions:

Place the egg yolks in a large mixing bowl.  Add 1 cup sugar and the 1/2 teaspoon cinnamon to the eggs.  Beat 3 minutes.  Pour in the melted butter and beat an additional 1 minutes.  Add the flour and continue beating until the mixture becomes very smooth.  Place the egg whites in a separate bowl.  Beat until light peaks begin to form.  Place the beaten egg whites into the egg yolk mixture and mix to combine well.  Heat the oven to 375 degrees.  Spray a square baking pan with a non stick cooking spray and dust with flour.  Pour the cake mixture into the prepared pan.  Place the apple slices on the top.  Put the 1 teaspoon of sugar and 1/4 teaspoon of cinnamon into a bowl and toss to combine.  Sprinkle over the top of the cake.  Bake 45 minutes or until a knife inserted in the center of the cake comes out clean.   Place the brown sugar in a saucepan.  Pour the water in on top of the brown sugar.  Pour in the corn syrup and mix well.  Place the pan over medium low heat.  Cook 3 minutes, stirring continuously until the brown sugar has fully dissolved.  Add the butter and continue cooking 2 minutes, stirring constantly until the butter has melted.  Turn off the heat and add the milk to the mixture.  Stir to mix all together completely.  When the cake is done allow it cool about 10 minutes.  Cut the cake into squares. Serve with the warm topping poured over the top of square.

Ingredients:

1/4 cup maple-flavored syrup
2 tablespoon butter or margarine
1/4 teaspoon ground cinnamon
4 cups Cocoa or Fruity PEBBLES Cereal
1 cup Dry Roasted Peanuts
2 cups Miniature Marshmallows
1 cup candy corn
1 cup candy-coated chocolate pieces

Instructions:

Grease a large baking dish.  In a microwave safe bowl put maple syrup, cinnamon and butter.  Microwave on high for 45 seconds.  Remove bowl from microwave and stir until butter is melted.  Can microwave an additional 5 seconds if butter is not soft enough. Mix cereal and peanuts together in large bowl.  Add to syrup mixture and fold together with rubber spatula making sure all ingredients are covered well.  Heat oven to 300 degrees.  Place cereal mixture into baking dish being sure to spread out evenly.  Place in oven and bake 30 minutes, stirring at 10 minute intervals to make sure cereal mixture cooks evenly.  Cool.  Once cereal is cool enough to touch, break into pieces in bowl.  Be sure the bowl has an air tight lid.  Add marshmallows and candies.  Place lid on bowl and shake to make sure all ingredients are mixed together. Can be stored at room temperature, in airtight container, for up to 3 days.
